Pancakes
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking powder
1 tsp salt
1 tbsp sugar
2 cups milk
2 eggs
¼ cup canola oil (vegetable oil)

- Preheat skillet between medium and high when the batter is nearly ready. It is hot enough when water drops evaporate quickly.
- Mix dry ingredients together in a medium mixing bowl.
- Add milk, egg and oil to dry ingredients and beat with electric mixer or whisk just until all dry ingredients are moistened. Too much mixing makes tough pancakes.
- Use a small amount of margarine to grease the pan immediately before frying the first pancakes.
- Pour batter into hot skillet with a ladel, about ¼ cup at a time.
- The pancake is ready to flip when some of the holes in the top no longer close, and when the edges begin to brown.
