Quesadillas

​Chicken – 1 breast, chopped
¼ of a med. Onion – chopped
¼ of a green pepper – chopped
1 T. chili powder
1 tsp cumin
1 tsp garlic salt
 
  1. In a skillet over med.-high heat, combine chopped onion, chopped chicken and about 1 T. veg. oil. Sauté until chicken is cooked through, adding chopped peppers half way through.
  2. Add chili powder, garlic salt, cumin and ¼ cup water. Stir until water is nearly evaporated.
  3. In a separate skillet, on medium heat, place 1 tortilla down and spread chicken mixture over one half. Sprinkle with shredded cheese. Fold tortilla over and fry for about 3-4 min.
  4. Flip and fry another 3-4 min.
Cut into triangles and serve with salsa and sour cream.
