Lasagna
EASIEST LASAGNA EVER
7 lasagna noodles
½ pound ground beef*
½ onion, diced
3 cups pasta sauce
1 cup cottage cheese
2 cups shredded mozzarella
1 large egg, beaten
2 tbsps Parmesan cheese
parsley leaves – a sprinkle for a garnish on top
Day 1
In a large pot of boiling salted water, cook lasagna noodles according to package instructions.
In a large skillet over medium high heat, fry beef and onion until beef has browned, making sure to crumble the beef as it cooks. Remove from heat.
Add pasta sauce to browned beef and stir well.
In a small bowl, whisk egg with a fork. Add cottage cheese, ½ cup mozza & Parmesan.
Layering:
Spread 1/3 of the meat sauce onto the bottom of a baking dish
Top with lasagna noodles (you may need to trim them)
Spread the cottage cheese mixture over the noodles
Top with lasagna noodles
Add 1/3 of meat sauce.
Top with lasagna noodles
Add last 1/3 of meat sauce
Cover with shredded mozzarella and sprinkle with parsley
Day 2 – Bake at 400 for 25 min.
