Waffles
1 cup all purpose flour
½ cup whole wheat flour (or all whole wheat)
½ tsp salt
2 tsp baking powder
2 eggs
1 2/3 cups milk
¼ cup vegetable oil
1. Preheat waffle iron.
2. Mix all the dry ingredients in a medium mixing bowl. Stir until well-blended.
3. Add the wet ingredients and beat with an electric mixer or whisk just until well-blended. Mixing too long results in tough waffles.
4. Add to hot waffle iron about ½ cup at a time.
5. Makes 4-5 Belgian waffles.
