1 cup all purpose flour
1 cup whole wheat flour
1 tbsp sugar
2 tsps Baking powder
1 tsp salt
1/4 cup (1/2 of a square) margarine or butter (COLD)
3/4 cup milk
Filling:
¼ cup margarine or butter
½ cup brown sugar
1 tsp. cinnamon
1. Preheat oven to 400F.
2. Mix dry ingredients together in a medium mixing bowl.
3. Cut in margarine with pastry blender until the size of small peas.
4. Add milk to dry ingr. , stir gently until combined.
5. Turn onto a floured surface and knead 10 times, flipping dough over and re-flouring your surface if needed (using as little flour as possible as too much flour makes it tough)
6. With a floured rolling pin roll dough into a rectangle approx. 12”X 6” and about ½ inch thick. Make sure the dough is evenly rolled out.
7. Filling: In a glass measuring cup, soften margarine in microwave for 10 seconds. Add sugar and cinnamon and mix well. Spread evenly over dough.
8. Roll up the dough (from the wider end).
9. Cut into 12 equal pieces.
10. *Place paper-lined muffin tin or place in a 9 X 13 baking dish.
11. Bake for 15-20 min. or until no longer gooey in the middle.
Drizzle with glaze once they have cooled. Glaze – ½ cup icing sugar + 1 tbsp milk + ¼ tsp cinnamon
*NOTE: Paper muffin liners make clean-up easier but sometimes the dough sticks to the paper and you end up wasting a lot. Baking in a pan works very well but it might take a little longer to bake.
