1. Roll out pie dough, cut into circles and press into muffin tins.
2. Preheat oven to 400F.
3. Chop enough apples to make 3 cups. Leaving the peel on increases the fibre.
4. Meanwhile, in a medium sauce pan mix ½ cup sugar, 1 t. cinnamon and 1 T. cornstarch.
5. Add chopped apples and ½ cup water.
6. Cook over medium heat until soft and thickened, stirring CONSTANTLY.
7. Pour into tart shells.
8. Top with more crust or leave open and bake at 400F until crust is done, about 15 min. for tarts This should
make about 12 tarts.
