½ cup whole wheat flour
½ cup white flour (or all whole wheat)
1 ½ cups milk
1 egg
½ tsp salt1. Measure dry ingredients into a small mixing bowl.
2. Add wet ingredients and beat with electric mixer or whisk, just until moistened.
3. Preheat skillet just slightly higher than medium.
4. Skillet is hot enough when a drop of water evaporates quickly in the skillet.
5. Grease your pan lightly with oil or margarine.
6. Pour about ¼ cup batter into skillet and tilt it around until the batter covers the bottom evenly. Cook until edges are brown and start to curl up.
7. Loosen edges with a flipper and flip.
8. Makes about 6-8 crepes
