Peanut Butter & Jam Muffins
1 cup milk
· 1 egg
· 1/3 cup peanut butter
· 2 tablespoons vegetable oil
· 1 ½ cups whole wheat flour
· ½ cup sugar
· 1 tbsp baking powder
· ½ teaspoon salt
· Jam (about ¼ cup)
1. Preheat oven to 400F and line muffin tin with papers.
2. In a medium mixing bowl beat the wet ingredients (except for the jam) with electric mixer until well blended.
3. Add dry ingredients on top of the wet and mix JUST UNTIL MOISTENED.
4. Put a little batter in each muffin tin and spoon 1 tsp jam in the middle of each.
5. Spoon the remaining batter over the jam to cover.
6. Bake at 400F for 25 minutes.
