Blueberry Oatmeal Muffins
1 ½ cups rolled oats
1 1/3 cups buttermilk
1 egg
¾ cup brown sugar
¼ cup vegetable oil
1 cup whole wheat flour
2 tsp. baking powder
½ tsp. salt
1 ½ cups blueberries
1. Preheat oven to 400F.
2. Stir oats and buttermilk together in a small mixing bowl, let stand about 5 min.
3. Beat egg, sugar and oil together in a medium mixing bowl with the electric hand mixer.
4. Add dry ingredients, oat/buttermilk mixture and blueberries on top of the wet and stir gently, just until moistened.
5. With the muffin scoop, divide evenly into 12 paper-lined muffin tins.
6. Bake for 20 minutes or until golden brown.
